The Triologies is a rich and yet elegant Chateauneuf-du-Pape red wine, from the house Domaine Fontavin and is made from three different grape varieties, Grenache, Syrah and Mouvédre, originating three different vineyards with 40 to 80-year-old vines. The bouquet is classic Châteauneuf with intense aromas of red fruit, licorice, and a hint of menthol. The full body is smooth on the palate with a taste reminiscent of black berries, black pepper, truffles, herbs and garrigue. The ripe tannins add structure, and the wine is a wonderful companion to rich dishes with its long and pleasant aftertaste. It can easily be aged for another 10-15 years in the bottle, which would develop the wine beautifully, making it even more smooth and complex. It can also be enjoyed straight away and goes well with for example veal stews, lamb, game or Boeuf Onglet with a rich sauce and herbs of Provence.
The head of the house Domaine Fontavin is Hélène Chouvet, and owns 45 hectares of some of the best vineyards in 8 different municipalities in Rhône, for example Vacqueyras, Gigondas, Beaumes de Venise og Chateauneuf-du-Pape. The estate is managed exclusively by women with Hélène at the helm. All the wines are certified organic. The grapes are harvested by hand and sorted manually. In the cellar additives are forbidden and the wine maker Agathe only uses natural yeast and utilizes sulphites at an absolute minimum. As all chemicals are banned from the estate, all production sites are steam-disinfected every year. The wine ages in a combination of concrete vessels and oak barrels for 12-15 months. Robert Parker, the renowned wine critic, awarded the wine 93 points out of 100, and it is also presented in the prestigious wine guide Le Guide Hachettes Des Vines 2020.
